Baked Chicken with Spices & Dijon Mustard

 Ingredients
2 pcs chicken leg quarters
2 chicken wings
Marinade
1 tsp sea salt
1 tsp black pepper
1 tsp garlic powder
1 tsp turmeric powder
1 tsp dried rosemary - pounded
1 tsp dried fennel seeds - pounded
1 tbsp soy sauce
1 tsp worcestershire sauce
1 tbsp dijon mustard
1/2 tsp paprika powder
1 tsp honey
rind of 1 lemon
juice of 1 lemon



 Method
  1. Wash lemon and grate the peel.  Set aside.  Marinate the chicken pieces with all the ingredients and leave in the fridge overnight.
  2. Preheat oven to 400F.  Place chicken pieces in baking tray and bake for 40 mins.
  3. Heat up any remaining sauce from the marinade.  Add some roasted cashew nuts to the sauce.
  4. Serve the baked chicken pieces with the sauce and some sliced cucumbers.
