1 sweet potato - peeled and cut into cubes
4 tbsp red beans - washed and soaked for 2 hours or more.
1 1/2 tbsp tapioca pearls
2 pandan leaves - knotted
1 tbsp rock sugar
5 cups water
- Bring water to a boil in a pot. Add red beans, pandan leaves and sugar. Cover and boil on low heat till red beans are softened. Add sweet potato and tapioca pearls to the pot and bring to a boil.
- Cover and switch off heat. The hot steam inside will continue to cook the ingredients.
- Dessert will be ready in 30 mins to an hour's time. Reheat and ladle into bowls and serve warm
