Sweet Potato Porridge (蕃薯粥/地瓜粥)

Once in a while, i will cook this sweet potato porridge for lunch, either orange-fleshed or yellow fleshed ones.  A nice complement to go with hubby's grilled vegetable platter.

Ingredients
1 sweet potato - peeled and cut into bite-sized pieces
1 cup rice grain
6 cups water

Method
  1. Bring a pot of water to boil.  Add rice grain and cut sweet potatoes and bring to a boil again.  Stir a little to prevent grains from sticking to the bottom.
  2. Turn off heat and cover and let it stand for 30 minutes, stirring occassionally for the first 5 minutes to prevent spilling.
  3. Reheat porridge and serve hot with some grilled vegetables.
