Chow Mien with Sweet Soy Sauce (甜酱油炒面)




Ingredients
for 2 servings
1 bunch of fresh yellow noodles 
2 eggs - lightly beaten
1 pc of fried fish cake - sliced into strips
1 small carrot - sliced into strips
2 fresh red chilli - remove seeds and sliced
 handful of chye sim or other greens
1 pc lean meat - sliced into strips
8 cloves garlic - peeled and chopped
1/4 yellow onion - peeled and sliced
1 1/2 tbsp dark sweet soy sauce
1 tbsp soy sauce
few tbsp chicken stock or water
pork lard oil
vegetable oil 

Seasonings for pork
1 tbsp soy sauce
1 tbsp huatiao wine
pinch of sugar
pinch of salt
1 tsp cornstarch

Method
Marinate pork with seasonings for a few hours or more.
Heat up vegetable oil in wok on medium low heat.  Fry the eggs till just cooked.  Remove and set aside.
Turn to high heat and fry the chye sim for a while.  Remove and set aside.
Add the pork lard oil to the wok and lower the heat.  Saute the onion and half of the chopped garlic till lightly fragrant.  Switch to high heat, add pork, fish cake and do a quick stir fry.
Add carrot and chilli and toss to mix well. Remove from wok and set aside.
Add some oil and saute the rest of the chopped garlic.  Add noodles and fry to mix well over high heat.
Drizzle sweet soy sauce and soy sauce and do a quick stir fry. Add some chicken stock or water if it is too dry.
Return the rest of the cooked ingredients to the wok and fry for a while more.
Transfer to serving plates and serve warm with some chilli sauce or pickled green chillies.
