Korean Ginseng Chicken Soup

Ingredients
1 cornish hen 
1/4 cup glutinous rice, rinsed and soaked in water for 2 hours
1 fresh ginseng root, washed
5 large dried jujube (red dates)
2 garlic cloves, lightly mashed
2 green onons, chopped
salt to taste
ground black pepper    
    
Method
  1. Strain the rice.
  2. Remove the giblets from the hen and rub them with salt all over to clean them nicely. Rinse under cold running water.
  3. Put the hen on the cutting board, pat dry, and remove any extra fat around the body cavities with kitchen scissors. Cut off the tips of wings if you want.
  4. Stuff the hen with rice, ginseng, jujube, and garlic cloves.
  5. Place the hens into a claypot. Add one pot of boiling water to cover the hen.  Cover and cook over high heat for 4 hours.
  6. Remove from the heat and serve this nourishing dish with dipping sauce.



For the sesame dipping sauce:
  • 1 teaspoon salt
  • 1 teaspoon toasted sesame seeds 
  • a pinch of ground black pepper
  • 2 tablespoons sesame oil
Combine salt, sesame seeds, ground black pepper, and sesame oil in a small bowl and mix well. Set aside.

For sweet sour soy dipping sauce:
  • 3 tablespoons light soy sauce
  • 1 tablespoon white vinegar
  • 1 teaspoon honey (or sugar)
  • 1/4 medium size onion, cut into chunks
  • 1 Jalapeno (or red or green chili pepper), sliced
Combine soy sauce, vinegar, and honey (or sugar) in another bowl. Mix well with a spoon. Add onion and jalapeno. Set aside.

1 tbsp chopped garlic
1 tbsp chopped shallot
1 tbsp chopped ginger

Espresso Walnut Cake

Ingredients
melted butter
2 teaspoons all-purpose flour 

1/4 cup packed brown sugar

3 tablespoons finely chopped walnuts

1 teaspoon ground cinnamon

1 tablespoon instant espresso or 2 tablespoons instant coffee granules, divided

5 tablespoons butter 

1 cup granulated sugar 

2 large eggs

2/3 cup plain fat-free yogurt or substitute with slightly less 2/3 cup milk

2 teaspoons vanilla extract

1/2 teaspoon baking soda

1/4 teaspoon salt



1 1/3 cups all-purpose flour

Braised Pork Belly with Dark Soy sauce

Ingredients
1 lb pork belly
4 eggs - boiled and peeled
1 packet medium soft tofu - sliced into large cubes

Pumpkin with Prawns in Spicy Fermented Bean Sauce


Ingredients
1/4 of a pumpkin - cut into large cubes
12 prawns - peeled
1 tbsp chopped garlic
1 tsp sesame oil 
salt and pepper to taste
1 tbsp cooking oil
1 cup water

Burger with Guacamole


Ingredients
1 burger bun
1 pan fried egg
sliced tomato
pan fried bacon slices
spoonfuls of guacamole

Method
Toast bun.  Place all other ingredients onto the bun and enjoy.

Beggar's Chicken (叫化鸡)

Pan Fried Yellow Croaker (干煎小黄鱼)

Ingredients
4 pieces of frozen yellow croaker (already salted)
dash of white pepper powder
1 tbsp flour
1 tbsp vegetable oil

Paper Wrapped Chicken (纸包鸡)


Ingredients
6 chicken drumsticks (deboned)
1 tbsp shaoxing wine
2 tbsp light soy sauce
1 tsp dark soy sauce
2 tbsp oyster sauce 
1 tbsp  ginger juice
1 tsp sesame oil
pinch of 5-spice powder
1 tsp minced garlic
salt and white pepper to taste
some cornstarch
oil for deep frying 

Things required
greaseproof paper (cut to required pieces for wrapping each piece)

Guacamole

Ingredients
1 large ripe avocado
3/4 tbsp lemon juice
2 tbsp diced onion
2 tbsp diced tomato
salt and black pepper to taste 

Method
  1. Wash avocado.  Cut into half.  Remove pit and scoop the flesh into a bowl.
  2. Add lemon juice and toss to mix well.
  3. Add diced onion, tomato, salt and black pepper.
  4. Combine to mix well.
  5. Ready to eat with chips or add to sandwich.

Creamy Vegan Cauliflower Soup

1 tbsp olive oil
1/2  sliced onion
1 cup chopped leeks (white parts only, from 2 leeks)
a little salt 
1/2 head cauliflower, chopped
3 cups vegetable broth
handful of unsalted cashews or blanched silvered raw almonds, soaked
sea salt to taste
chopped parsley or chives for garnishing

Hollywood Plum Jam





Ingredients
4 cups hollywood plums, washed and pitted
2 cups sugar
1/2 tsp ground cinnamon

Steamed Butterfish

Ingredients
2 butterfish - cleaned
shredded ginger
few slices of butter
1 tomato - sliced

Method
  1. Place fish on a steaming plate.
  2. Add tomato and shredded ginger.
  3. Sprinkle salt on the fish and place sliced butter on top of the fish.
  4. Place fish in a steamer with boiling water.
  5. Steam for 10 minutes on medium high heat.
  6. Serve warm with rice.

Soft boiled Ramen Egg


Ingredients
2  large eggs
Water 

Method
  1. Take 2 eggs from the refrigerator and place it in a pot.
  2. Add water to cover at least 2/3 of the eggs and bring to a boil.
  3. Reduce heat to medium high, cover and boil for 4 1/2  minutes, stirring occasionally.
  4. Remove eggs and place in a bowl of cold tap water, covering the eggs.
  5. Let the eggs sit for 2 minutes to cool down.
  6. Peel and soak the eggs in your favourite broth for at least 5 hours. 
  7. Enjoy the delectable soft egg white and the squishy, runny yolk melting in your mouth!
  8. A tasty accompaniment to a bowl of ramen or just simply your favourite soup noodles.
