Braised Chicken in Red Wine

Ingredients
half chicken - chopped into pieces, bone-in
1/2 teaspoon salt, divided 
1/2 teaspoon freshly ground black pepper, divided 
2 tablespoons olive oil 
1/4 cup all-purpose flour 
1/2 cup chopped shallots 
1 tablespoon chopped garlic 
1 teaspoon chopped fresh rosemary 
1 cup Chianti or other rich red wine 
1 cup unsalted chicken stock (such as Swanson)
1 teaspoon sugar 
1 (14.5-ounce) can unsalted whole tomatoes, crushed and undrained 
1 bay leaf 
2 tablespoons chopped fresh flat-leaf parsley

Mango Lassi


Ingredients
1 cup whole milk yogurt
1 cup milk
3 mangoes - peeled, remove seed and cut into small pieces
3 green cardamoms - cracked and pound into powder
honey to taste

1 shitake mushroom - soaked, drained and cut into small pieces

Pan Fried Tofu with Beech Mushroom


Ingredients
1 box of firm tofu - cut into pieces
1 packet of beech mushrooms - washed and divided
1/4 bowl minced pork
1 tsp chopped garlic
handful of chopped basil 
some water
cornstarch solution

Claypot Pork Rib Rice with Fermented Black Bean




Ingredients
1 cup heapful rice grains - washed
3/4 lbs pork ribs
1 chinese sausage - sliced
1 tbsp fermented black beans - soaked for 20 minutes and drained

Stir Fried Udon with Portobella Mushroom

Ingredients
2 servings of fresh udon
handful of roasted portobella mushrooms
1/2 small yellow onon - sliced

2 stick (226 grms) unsalted butter, at room temperature
2 cups sugar
4 extra-large eggs
1/3 cup grated lemon zest
3 cups flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1/4 cup freshly squeezed lemon juice
3/4 cup buttermilk, at room temperature
1 teaspoon pure vanilla extract

For Syrup
 

1/2 cup sugar
1/2 cup lemon juice

For the Glaze
 

2 cups confectioners' sugar, sifted
3 1/2 tablespoons freshly squeezed lemon juice

Mee Siam



Ingredients
 
The Gravy  
1 large yellow onion - quartered
6 shallots
6 cloves garlic - peeled
10 dried red chillies- soaked in hot water till soften, then drained
5 fresh red chillies - remove seeds
6 tbsp dried shrimp - soaked in hot water till soften, then drained
1 tbsp belachan 
5 tbsp fermented soybean/tau cheo
6 tbsp roasted peanuts
5 tbsp tamarind pulp - soaked in 1/2 cup hot water till soft, then drained  
6 cups chicken stock or water
1 tsp sugar
1 tsp salt

1 bittergourd - remove pith, seeds and sliced thinly
1 small bell pepper - cut into strips
handful of prawns - peeled and deveined
salt and pepper to taste
1 tsp chopped garlic
1 tsp hua diao wine
1 tbsp fish sauce
some cornstarch solution

Crab Meat Porridge



Ingredients
2 crabs - cleaned and chopped into pieces
1 cup rice grains - washed
3 cups water to cook porridge
salt and pepper to taste
ginger slices
2 cloves garlic

BBQ Rainbow Trout


Ingredients
1 rainbow trout
salt and pepper to taste

Method
Marinate fish with salt and pepper.
Heat up weber grill on high.
Place fish on grill and cook for a few minutes on each side. 
Serve warm with rice

Baked Rosemary Chicken with Potatoes


Ingredients
half chicken
2 potatoes - peeled and cut into cubes
1 large carrot - peeled and cut into cubes
1 small white onion
2 sprigs fresh rosemary
salt and pepper to taste
honey for brushing

Stir Fried Minced Meat with Potato and Sweet Basil


Ingredients
2 small potato - peeled and cut into cubes and steamed till cooked
1/2 lb minced meat
bunch of sweet basil leaves - sliced to small pieces
1 chilli padi - deseeded and cut into pieces
1 tbsp chopped garlic
1 tbsp oyster sauce
1 tsp sesame oil
1 tbsp chilli sauce
salt and pepper to taste
1 tbsp cooking oil

Method
  1. Heat up cooking oil in a pan.  Fry chopped garlic till aromatic.
  2. Add minced meat and stir fry over high heat.
  3. Add cooked potato cubes into the pan.
  4. Add sweet basil leaves, chilli padi, oyster sauce, sesame oil and chili sauce.
  5. Do a quick stir fry over high heat.
  6. Add salt and pepper to taste.
  7. Serve warm with rice.

Steam eggs with seaweed

Ingredients
3 eggs
half cup water
some dried seaweed - soaked, drained and cut into strips
1 tbsp soy sauce

Stir fry potato strips with vinegar and sugar

Ingredients
3 yukon potatoes - peeled and cut into strips
1 red bell pepper - cut into strips (optional)
1 tbsp chopped garlic
2 tbsp black vinegar
2 tbsp soy sauce
sugar to taste
2 tbsp cooking oil

3 eggs - beaten
bunch of sweet basil leaves - sliced
1 red chilli - chopped
1 tbsp soy sauce
pinch of salt and pepper
2 tbsp cooking oil
